So, the other day I woke up craving some vegetable lasagna, which I never actually had eaten before. So, why not try to make one?

Noutro dia, simplesmente acordei com um desejo de comer lasanha de vegetais, que só por a caso nunca tinha comido antes. Então, por que não tentar fazer uma?

By the way, my love for rice and coconut milk is still going strong, so I made a rice and coconut milk béchamel sauce!

Tenho que confessar que o meu amor pelo leite de arroz e de coco ainda está indo forte, pelo que fiz um molho de bechamel com o leite de arroz e coco!

Here is a simple and tasty recipe for vegetable lasagna. You can make it totally vegan, by just using a substitute for the butter, and using some vegan lasagna noodles.

Eis uma receita simples e saborosa para lasanha vegetal. Podes a tornar completamente vegetariana, usando um substituto para a manteiga, e para a massa da lasanha.

Ingredients | Ingredientes

½ chopped onion | ½ cebola cortada
1 green pepper | 1 pimento verde
1 clove garlic | 1 dente de alho
1 zucchini | 1 courgette
Leek | Alho francês
Kale | Couve kale
Spinach baby leef | Folhas de espinafres
½ cooked beet | ½ beterraba cozida
Sweet corn |  Milho
Ginger | Gengibre
Salt | Sal
White pepper | Pimenta branca
Oriental mix (basically tasted like cumin) | Mistura oriental (basicamente sabia a cominhos)
Nutmeg | Nós moscada
Oregano | Orégãos
Olive oil | Azeite
White wine | Vinho branco
Lasagna noodle | Massa para lasanha fresca
Pineapple | Ananás
Wheat flour | Farinha de trigo sem fermento
Rice and coconut milk | Leite de arroz e coco
Butter | Manteiga



  1. On a low heat, add olive oil and finely chopped onion. Let it cook until the onion is translucent, and then add the chopped garlic and the finely minced ginger.
  2. Add the green pepper, let it cook for some minutes, before adding the chopped courgette, leek and kale. Let it cook.
  3. Add the sweet corn, spinach and beet. Also, add the salt, white pepper and spices (I add nutmeg, oregano and an oriental mix, that tasted a lot like cumin)
  4. Add the white wine, and let it evaporated.




Rice and coconut béchamel sauce:

My love for rice and coconut milk is still going strong, so instead of milk I used the rice and coconut milk.

To melted butter, add (filtered) flour and mix it. Then add hot rice and coconut milk, and let it boil while continuously stirring. Add salt, white pepper and nutmeg.


Las step, Lasagna:

  1. Lay the lasagna noodles on a board, wet it with the rice and coconut béchamel sauce, before adding the vegetable filling. At the last lasagna noodle, add the rest of the béchamel sauce and top it with some bits of pineapple.
  2. Put in the oven at 200 oC for 20-30 min.


Really really tasty! The béchamel sauce with the rice and coconut milk turn out to be pretty good, and it’s perfect with cut pineapple. Totally recommend!

Ficou mesmo muito saboroso! O molho de bechamel com leite de arroz e coco ficou muito bom, e perfeito com os pedaços de ananás. Recomendo!
