So today I bring a very easy recipe (good for a lazy day):
Ingredients (for 3 people):
½ medium onion 2 cloves garlic
Olive oil Salt
White pepper Nutmeg
1 home style Chicken Stock (Knorr®) 1 hand of Green beans
Broccolis 1 Zucchini
5 leaves of cabbage 2 carrots
“3 finger size” Portuguese chourizo (you can simply vary this option: bacon, shrimp, grilled chicken, tofu, etc)
Spaghetti, fettuccine, however you find home J
- Boil water, add a little of olive oil and add spaghetti, a half of chicken stock and salt. Take it before al dente.
- On low heat, add the olive oil and the finely chopped onion on a frying pan. Let it cook until onion translucent and then add the chopped garlic. Add the chopped chourizo and let it cook for 5min, before adding all the chopped veggies. I add firstly, green beans, broccolis, carrots, zucchini and finally cabbage. I leave 2-3min between adding the different veggies. Add salt, a little more olive oil while cooking, white pepper, nutmeg and the other half of chicken stock.
- After the veggies are cooked, step them aside. Put the spaghetti in the same frying pan with a little of olive oil and then add the veggie mix from step 2.
- Take out of the heat and add the roasted almonds.

You can served with a sauce (white sauce, rose sauce, etc)
You can make this simply vegetarian (you can add tofu instead of the chourizo) or if you want some protein, chourizo, bacon, shrimp, chicken, etc, however you have at home.
